Skin-on Potato Wedges

Preparation time - 40 min



  • 450g Rooster potatoes 

  • 2 tbsp olive oil

  • 1 tbsp chopped chives

  • Sea salt and freshly ground pepper.



1. Preheat the oven to 200° C.

2. Cut the potatoes into similar size wedges.

3. Dry the wedges with kitchen paper. 

4. Place on a baking tray and drizzle with olive oil, toss to coat.

5. Sprinkle over some salt and pepper.

6. Bake in the oven for 25-30 mins or until golden and cooked through. Top with chives.
